Elimination diet: Lunch???

I haven't had any trouble so far coming up with meals for breakfast, snacks, and dinner, but I'm at a loss for lunch! I think I might have some Chinese rice noodles that I will cook up and make something with that the kids might like. For those who are wheat/dairy free, what do you serve for lunch?

Ahhh - lunch. Yeah - that's a tricky one. Usually I will eat leftovers from dinner the night before. Most often I am snacking all day and never really have a proper 'meal'. Veggies w/ sour cream and ranch. (my Em would drink the bottle of ranch if we didn't mix it w/ sour cream to spread it out). A cheese quesadilla on corn tortillas. Or cold tuna salad w/ grapes/grated onion/grated garlic/celery. A sandwich made w/ a loaf of gluten free bread I may have made (haven't made any in quite a while. Or fry up some rice noodles w/ butter and an egg and some soy sauce. Yum!
